Carrot Crunch Salad

Serves 4    I don’t remember who passed this recipe to me, but I’d love to thank them. It’s been a lunchtime favorite for quite a few years. Crunchy, flavorful and easy to put together.  For a great brown bag treat, keep the shoestring potatoes in a separate baggie and add them just before eating.

 

Ingredients:

4-5 fresh carrots – peeled and shredded

1 can/jar good tuna – drained

2 green onions, chopped

Mayonnaise – just enough to moisten

2 dashes lemon pepper

1/2 cup canned shoestring potatoes

 

Directions:

Mix together the shredded carrots, tuna, lemon pepper and green onions. Add just enough mayonnaise to moisten the mixture and hold the salad together. Gently stir it in.

 

When you’re ready to serve, add the shoestring potatoes and mix them in. Plate it on some ice cold lettuce – or eat it as is.
