Get Well Casserole w/Rice

Serves 4   After 2 weeks of fighting a bad cold – and eating way too much bland soup and jello – I sent my husband to the store for some comfort food staples: a roasted chicken, fresh green beans and a can of cream of mushroom soup. The casserole we fixed was simple, had my taste buds dancing….and was better than penicillin!

 

Ingredients

1/2 cup shredded or chopped cooked chicken

1/2 lb. green beans – ends trimmed, cut into bite sized pieces

1 can Cream of Mushroom soup

1/4 cup mayonnaise

1/4 cup water (or chicken broth)

1 Tbsp white wine (optional)

1/4 cup grated sharp cheddar cheese

1 Tbsp olive oil

1 cup Texmati rice

pinch Kosher salt

1 can Swanson’s chicken broth

1 Tbsp dried onion

1 tsp garlic powder

 

Directions
Grease an 8” casserole dish, Preheat oven to 350º

In microwave safe bowl, cover the green beans w/a paper towel and cook on High for 1 minute. Drain, if needed. Stir in the cooked chicken and set mixture aside.

In a small bowl mix the soup, mayonnaise, and water (or broth) and wine (if using) and stir until well blended. Correct seasoning as needed. Pour mixture over the green bean mixture and stir to mix well. Pour into the casserole dish and top with the cheese. Cover with foil and bake for 30-35 minutes at 350º.

 

Meanwhile, make the rice. Heat the oil in a saucepan, add the rice and stir until well coated. Add the garlic powder, pinch salt, dried onions, and chicken broth. Bring to a boil, stir once thoroughly, put a tight fitting lid on the saucepan and reduce the heat as low as it will go. Allow it to simmer for 15 minutes.  Then remove it from the heat and let it sit until you’re ready to use it — a minimum of 10 minutes. DO NOT REMOVE THE LID until you’re ready to serve. Then I like to stir in a Tbsp or so of butter and adjust the seasoning

Spoon the casserole over the hot rice and serve with a nice crisp salad on the side. Enjoy!

Notea good addition to this dish would be some sauteed mushrooms and diced onion instead of the dried variety, plus some fresh garlic sauteed with the rice before adding the broth.
