Marinated Garbanzos

Makes about 1-1/2 cups    I like a green salad with character, so I’ll put in chopped green onions, shredded cheese, chopped roasted beets, other veggies, tomatoes, fruit, raisins, and chopped nuts for example. One of my favorite additions is marinated garbanzo beans. In fact, sometimes I’ll just put a spoonful on some cottage cheese for lunch. They are easy to make and easy to use.



1 regular sized can garbanzo beans, drained and rinsed

1 Tbsp minced onion or dried onion

1 Tbsp chopped parsley or chives

pinch of garlic powder

dash cayenne (optional)

1/2 cup+ Wishbone Italian Dressing



Place all the ingredients in a resealable container, stir to mix well and adjust seasoning if needed. You usually don’t need to add any salt or pepper because the Wishbone dressing has a lot of flavor.

Put the container in the refrigerator and shake it up every so often so all of the garbanzos get marinated. They are good to use after about 30 minutes – although I usually let the flavors blend overnight before using.
