Green Bean Supreme

Serves 4-6  I like to serve this dish for company because it presents well – and it’s very tasty.



2 Tbsp butter – melted

1 clove garlic – minced

2-3 cups fresh green beans, trimmed and cut into bit size pieces

Juice of 1/2 lime

Olive oil

White truffle oil (optional)

1 tsp + parmigiano reggiano cheese (grated or flakes)

1/4 cup sliced almonds

1/4 cup toasted bread crumbs




Melt 2 Tbsp butter in small dish.  Add  minced garlic and set aside for  5- 10 minutes to blend flavors.

Cut up about 2-3 cups fresh green beans into bite sized pieces. (To keep them looking bright green, bring some water to boil in a saucepan. Also prepare a medium sized bowl with cold water and about a dozen ice cubes and set aside. Carefully drop some of the cut beans into the boiling water and leave for about 30 seconds. Then remove them with a slotted spoon and immediately place them in the ice water and continue to do this until all of the beans have been done. Then drain them well and continue with the recipe. You can skip this step if you’re in a hurry or the appearance isn’t that critical. They will still taste great.)

Place green beans in a microwave safe dish. Add juice of 1/2 lime and mix to coat beans. Then drizzle with a little olive oil and the truffle oil (if using) and stir again to coat.  Cover dish w/paper towel and microwave for about 2+ minutes (keep beans crisp). Carefully drain any excess water. Lightly salt beans to taste, add freshly cracked pepper and stir in the melted garlic butter. Sprinkle the top of the beans with sliced almonds, toasted bread crumbs and about 1 tsp parmigiano reggiano cheese. Serve.
